Welcome to brushstroke Restaurant


Brushstroke Restaurant is joint venture between Chef David Bouley and The Tsuji Culinary Institute based in Osaka, Japan. Under Chef Isao Yamada’s direction, a modern interpretation of kaiseki cuisine and sushi is presented entirely around tasting menus that change weekly following the seasons. Kaiseki uses fresh ingredients to build a progression of flavors and sensations, with courses designed to be visually beautiful, delicious and surprising.
