Caviar is the crown of David Bouley’s signature dish: “Malibu Sea Urchin, Green Apple Cloud, Golden Osetra Caviar”. Learn to make this Bouley favorite and elevate your home cooking to haute cooking, creating your own signature dishes.  Toast with champagne (Drouilly NV) to celebrate the history, culture, health and flavor properties of caviar and trout roe.

Trout roe has a unique chemistry, rich in the protein Astaxanthin. Chef will discuss the relationship between food chemistry, color and health properties of caviar and trout roe, as well as other orange and red foods containing cancer-protective carotenoids, which are recommended for immune boosting and preventative properties.
