Trout roe has a unique chemistry, rich in the protein Astaxanthin. Chef will discuss the relationship between food chemistry, color and health properties of caviar and trout roe, as well as other orange and red foods containing cancer-protective carotenoids, which are recommended for immune boosting and preventative properties.
