“Dashi” the foundation of Japanese Cuisine. Learn how to make Chef David Bouley’s famous Porcini Flan, Alaskan Dungeness Crab, Black Truffle Dashi (pictured above).

Dashi is full of health benefits and can easily connect to Western cooking. We will show how to make a collection of most popular uses, as well as literature supporting health benefits, for instance macrobiotic cooking and popular vegetable preparation, a hearty low sodium miso soup full of creative ideas beyond normal miso soup.

A 3-course 2-wine pairing lunch is prepared specific to each class subject with ingredients used during the demonstration.
