Dashi is full of health benefits and can easily connect to Western cooking. We will show how to make a collection of most popular uses, as well as literature supporting health benefits, for instance macrobiotic cooking and popular vegetable preparation, a hearty low sodium miso soup full of creative ideas beyond normal miso soup.

A 3-course 2-wine pairing lunch is prepared specific to each class subject with ingredients used during the demonstration.
